1 whole leek
1 eating apple, grated
2 medium carrots, grated
Juice of half a lemon
2 tsp Olive oil
A little mayonnaise, or vegan alternative
When preparing the leeks, cut the whole leek in half long ways, and then chop finely, and put in a bowl of water to soak. Drain and repeatedly wash the leeks. Once clean, mix with the carrot and apple, and mix with the other ingredients.
As an alternative, omit mayo, adding fresh parsley and a finely chopped tomato, some spring onion, and a glug of cider vinegar.
