Vegan Pumpkin and chocolate cake by Cristina

Ingredients
2 cups of flour
1.5 cups sugar
1.5 tsp baking powder
1 tsp baking soda
1/2 tsp cinammon
100ml non dairy milk
80ml cooking oil
1 tbs apple cider vinager
1 cup mashed pumpkin or pumpkin puree
1/3 cup dark chocolate chips

 

Chocolate Ganache
150g dark chocolate chips
80ml non dairy milk

 

Instructions
Mix together all of the first 5 ingredients (flour, sugar, baking powder, baking soda and cinammon). Then add the liquid ingredients (milk, oil, vinager).
Add the pumpkin puree. Mix well – it is a thicker dough..a bit like muffin dough.
Add and mix the chocolate chips in.
Put in a baking tin (tip: use baking paper) or muffin tins.
Oven at 180C temp for between 45-55min
Aim for it to be golden on top.
Leave it to cool while you prepare the chocolate ganache.

 

For the Ganache
Simply put the milk and chocolate chips in a bowl and heat them up in the microwave for 45 seconds. Mix it well and spread onto cooled cake.
