Autumn Nutty Salad

This is a quick and easy salad, and a great way to use turnip – an unusual vegetable, but delicious fresh in a salad.

Ingredients

2 sticks celery
1 small turnip (or half a larger one)
2 large Chinese cabbage leaves (other types of cabbage also work, including red cabbage)
1 apple
Handful of raisins
Handful of toasted mixed nuts/seeds (I use a mixture of cashews, pumpkin seeds and sunflower seeds)
Olive oil
Balsamic vinegar

Method

Chop up the celery, turnip and cabbage into small pieces (some people prefer really small pieces, others larger chunks).
Core and grate the apple.
Mix everything together in a bowl with a drizzle of olive oil and balsamic vinegar, and serve!
