Broccoli and Feta Fritters

4 small crowns of broccoli
3 eggs, lightly beaten
75g plain, oat or gluten-free flour
75g mozzarella cheese, shredded
85g feta cheese, crumbled
2 cloves garlic, finely chopped
3 tablespoons chopped dill
1 teaspoon onion powder
half teaspoon chilli pepper flakes
salt and pepper to taste

1 Steam the broccoli and leave to cool before chopping into chunks.
2 Combine all the ingredients in a large bowl. Make around 12 large balls from the mixture. The mixture may be a bit wet, but will form a fritter in the pan when the cheese melts.
3 Heat 2 to 3 tablespoons olive oil in a hot pan. Put the broccoli balls in the pan, flattening them out a little.
4 Lower the heat to medium and cook for 6 minutes on each side until golden brown. Lower the heat if they’re getting too brown.
5 Delicious served with tsatziki!
