Minestrone Recipe From Jamie Oliver

“I cook this minestrone recipe (Jamie Oliver) nearly every weekend, as it uses loads of the veg in the Oak tree veg box, and is really tasty. I miss out the dried beans bit (the first paragraph of the recipe) and just cut up some of the runner beans and chuck them in with the tomatoes instead. I also use the fresh tomatoes from the farm instead of the tinned ones and the chard instead of spinach. I put a good heaped tablespoon of pesto in at the end too. It works with pretty much whatever you happen to have in your fridge.” (Helen)
